Tomato Sauce anyone?

I'm looking for an EASY and quick tomato sauce that I can make for the family... does anyone have one they can share?

Basic Tomato Sauce

This is one I make often.  It is simple and quick and everyone loves it!

-1 can crushed or diced or whole tomatoes (I use a hand mixer to puree diced or whole tomatoes)

-1/4 green or red pepper (chopped in small pieces)

-1/4 onion (chopped)

-2-3 garlic gloves (chopped)

-2-3 Tbsp Olive oil (add more if you like)

-s & p and any other italian seasoning you want to add.  I like fresh basil but taste good without it.

Cook the onion, garlic and pepper in olive oil on medium for a few minutes until they are soft and onion is light brown.  Add basil and tomatoes and simmer for 30-40 min.  Cook any type of pasta as dente and toss with the sauce and lots of fresh parmesan cheese.  I also add ricotta cheese for a creamy and cheesy taste (kids don't like it but I love it).  You can also toss fresh spinach which is also delicious!

Tip-Double the recipe and freeze a batch.  You can also use this sauce to make pita pizzas for the kids.

Let me know what you think.  ENJOY!

Thanks Sandra!

I will try it and let you know... I've had the pleasure of tasting it before and am looking forward to making it myself :-)

kid friendly

This may not be easy or fast enough, but I found when my kids were younger and didn't like (chunks) in their sauce, they loved this one because I would put it in the blender.

-1 can plum tomatoes (or diced tomatoes
-2 tsp tomato paste (I freeze the rest of the can by teaspoons for next time in plastic bag)
-2 onions (chopped)
-2 cerery sticks (chopped)
-5 Tbsp extra-virgin olive oil
-add garlic, basil if you like
-add garlic and basil if you like

-Cook all ingredients for 10-15 minutes until the onions and celery are soft.  Puree the sauce through a food mill, or in a food processor or blender.  Return the sauce to the pan and add 4 tbsp red wine (if you like).  Continue cooking for 40 minutes longer.  Mix in 2 tbsp butter, taste and check seasoning.
