Penne with sausage, spinach and garlic

Here's a quick and delicious pasta dish.

-400 g of your favourite sausage (I use spicy sausage or for a change try sausage with spinach and feta)

-3-4 cups spinach

-1-2 garlic

-olive oil

-grated cheese

-300-400 g penne pasta

Preheat oven at 375. Cook the sausage in an oven dish wrapped with tin foil (I like to add 1/2-3/4  c wine or chicken stock) for 45-60 min turning as needed.  You may also need to add more liquid (wine, chicken stock or water).

When the sausage is almost ready, cook the penne in boiling water.  At the same time chop the garlic and cook in 2-3 tbsp olive oil on medium.  When it is almost brown remove from heat and toss the spinach.  

Slice the cooked sausage in small pieces and toss with garlic, spinach and cooked penne.  You may need to add more olive oil.  Add your favourite grated cheese.  This dish can also be prepared ahead of time.  Hope you like it!
