Crockpot
I have recently re-discovered my crockpot and am loving it. It is such a great feeling to throw all your ingredients in one big pot in the morning and know for the rest of the day that your dinner is done. It honestly makes me feel lighter :-)
I got this recipe from the Oxygen magazine and love how easy and low fat it is...
Chicken with Sun-Dried Tomatoes
2 oz sun-dried tomatoes (not packed in oil)
1 large onion, sliced
8 oz whole baby carrots
2 stalks celery, sliced
1 tsp dried thyme
1/4 tsp salt
1/4 tsp black pepper
4 boneless chicken breast halves
1/4 cup fat-free chicken broth
2 cups cooked brown rice
1) Slice sun-dried tomatoes and place in the bottom of a slow cooker along with the onion, carrots, celery and seasonings.
2) Place the chicken breasts on top of the vegetables and pour the chicken broth over top.
3) Cover slow cooker and cook on low for 4 to 6 hours, or until chicken is no longer pink and carrots are tender. Serve with the rice.
